Bengali steamed sandesh


INGREDIENTS

  1. Milk : 2 litre
  2. Lemon : 2 medium size
  3. Sugar : 5-6 spoon ( powdered)

PROCEDURE

First of all make chena from the fresh milk using the lemon juice. For making chena you need to boil the milk first and then add the lemon juice slowly and suddenly the milk solid will start to seperate. Now drain all the water with a drainer and keep the chena in a cotton mushlin cloth and wash it in running water for removing the lemon flavour from chena.Now hang the chena for atleast one hour. Now add the chena in mixer grinder with powdered sugar and milk and grind them all one by one . Ma ke a semi liquid paste of chena . Now take a mould and greeze with ghee and pour the chena batter into it. Add kesar from top.Pre boil water in a big pan with cover and place a stand into it.Now add the mould inside the boiling water and cover it. Now let it steam for 20-25 mins. Take out the mould and let it cool down outside.Now keep it inside refrigerator to let it set properly. Once it set keep the mould on gas oven just for few seconds so that the ghee melts from bottom inside the mould.Now place the whole sandesh into a plate and give your choiceable size. Pui saag without onion and garlic

INGREDIENTS :

  1. Pui saag : 500 gms
  2. Pumpkin : 150 gms
  3. Potato : 1 medium size
  4. Brinjal : 1 medium size
  5. Panchforon : 1/2 tea spoon
  6. Ginger : 1/2 inch paste
  7. Green chilli : 2-3 cut into lenth wise
  8. Bay leaves : 1
  9. Red dry chilli : 1
  10. Red chilli powder : 1/2 tea spoon
  11. Turmeric powder : 1/2 tea spoon
  12. Salt : Taste wise
  13. Sugar : Taste wise
  14. Urad dal bori : 5-6 pieces

PROCEDURE

First of all wash the green pui saag thoroghly and cut into medium pieces and cut the potato,pumpkin and brinjal in lenth wise. Now take a kadai , add mustard oil and fry the bori. Keep the bori aside. In the same kadai add panchforon , bayleaves and dry chilli. Now add potato and fry for some time. Then add pumpkin and brinjal and fry for 1-2 mins. Add turmeric powder, Red chilli powder , salt and sugar.Again fry for 2 mins. Now add ginger paste , green chilli and the washed pui saag. Fry for 2 mins in medium high flame. Now put a lid and let it cook in low flame for 10 mins.No water needed. Add the fried bori . Again mix well and let it cook for another five mins.Serve hot with plain white rice and share your experience with me in comment box.

Raw Papaya Chatney:

INGREDIENTS :

  1. Raw papaya : 400 gms
  2. Sugar : 1/3 cup
  3. Cashew : 7-8 piecese
  4. Raisins : 7-8 pieces
  5. Cinnamon powder : a pinch
  6. Cardamom : 2 pieces
  7. Lemon juice : 1/2 tea spoon
  8. Ghee : 1 tea spoon

PROCEDURE

First of all grate the papaya with the thick peelar.Now add ghee into the pan fry for some time.When it becomes soft add sugar (i used haldiram sweet tin ras,as i had it at home)and mix them well and let it boil.Now add salt very less , add two cardamom and a pinch of cinnamon powder, 3-4 cashew into small pieces and few raisins. At the end add half tea spoon lemon juice and again ghee on top and mix well.serve cold..

sweet bonde

INGREDIENTS :

  1. Boondi : Haldiram plain packet boondi (200gms)
  2. Sugar : 2 cup
  3. Cardamom : 4-5 pieces into powder

PROCEDURE

First of all make sugar syrup and for that take a deep pan , add 2 cup sugar into it and add 2 cup water . Let them boil until your two fingers makes a thred in between with the syrup. Now in the boiling syrup add readymade boondi and cardamom powder.Mix them well and turn off the gas. Put a lead on top of the pan for some time. All boondi will soak into the syrup. INGREDIENTS :

  1. Capcicum : 1 yellow, 1 green, 1 red(cut into thin long pieces)
  2. Carrot : 2 medium size ( cut into long thin pieces)
  3. French Beans : 7-8 ( cut into long pieces )
  4. Potato : 2 medium size ( cut like french fries)
  5. Tomato : 4 medium piece(make paste)
  6. Ginger : 1.5 inch ( paste)
  7. Green chilli : 5-6 ( cut lenghwise)
  8. Cumin seeds : 1 tea spoon
  9. Hing : 1/2 tea spoon
  10. Butter : 2 tea sppon
  11. Coriander powder : 1 tea spoon
  12. Red chilli powder : 1 tea spoon
  13. Turmeric powder : 1 tea spoon
  14. Kasuri Methi : 1 tea spoon
  15. Whole Garam masala : 4 cardamom, 4 cloves, 1 inch cinnamon stick
  16. Bay leaves : 2
  17. salt : taste wise
  18. Fresh cream : 2-3 spoon
  19. Corriander leaves : finely chopped a handful

PROCEDURE :

First of all fry all the vegetables in white oil. Now in the same pan add butter , add cumin seeds and hing. At the same time add all whole garam masala , add ginger paste and green chilli, fry for some time. Now add corriander powder and add tomato paste.Add turmeric powder, red chilli powder ,salt and cook until oil seperates . Now add fresh cream and kasuri methi and cook again until oil started leaving. Now add all the fried vegetables and mix well. Add very less water to mix them properly. Let it cook with lid for few minutes. potato soya chunk curry without onion and garlic

INGREDIENTS

  1. Potato : 2-3 medium size
  2. Soya : One cup
  3. Tomato : 1 medium size
  4. Ginger : 1 inch long paste
  5. Green Chilli : 2 piece into paste
  6. Whole Gram masala : 2 cardamom, 2 cloves , 1 inch cinnamon stick
  7. Bay leaves : 1
  8. Coriander powder : 1 tea spoon
  9. Cumin Powder : 1 tea spoon
  10. Red chilli Powder : 1 tea spoon
  11. Kasuri Methi : 1/2 tea spoon
  12. Garam Masala powder : 1/2 tea spoon
  13. Salt : Taste wise
  14. Turmeric : 1/2 tea spoon
  15. Sugar : 1/2 tea spoon
  16. Ghee : 1 tea spoon
  17. Hing : 1/4 tea spoon
  18. Coriander leaves :2 spoon finely chopped

PROCEDURE

First of all boil water and add the soya chunks till it gets soft. Now wash the soya chunks with water and squeez the water and keep it aside.Before starting cooking, take a bowl and add ginger green chilli paste , all the dry masala powder, sugar and salt and also some water and make a masala paste of all. Take a kadai, add oil into it and let it become hot..Now add the cubed potatoes and fry till golden brown and then add the soya chunks too for frying sometime. In the same kadai add oil , whole cumin seeds, whole garam masala and bayleaf. Now add tomato pieces , fry till oil leaves. Now add masala paste into it, cook until oil seperates. Now add fried potato and soya chunks into it with some sprinkle of water. Cook nicely for 5 minutes and then add one cup of hot water into it, cover with a lid and let it boil. Check if its cook well take a small pan add ghee and hing and add it into the curry and let it boil for another two minutes. Now add freshly chopped coriander leaves on top. Tomato Rice Without Onion and Garlic

INGREDIENTS :

  1. Basmati Rice : 3 cup
  2. Tomatoes : 4-5 medium size
  3. Peanuts : half cup
  4. Ginger : 2 inch long piece (paste)
  5. Green Chilli : 2-3 chopped
  6. Whole Garam masala : 2 cardamom,1 inch cinamon stick,3-4 cloves,2 bay leaves
  7. Mustard Seeds: 1 tea spoon
  8. Jeera : 1/2 teaspoon
  9. Jeera powder: 1 tea spoon
  10. Red chilli powder : 1 tea spoon
  11. Turmeric powder: 1 tea spoon
  12. Salt: Taste wise
  13. Aachi kadai chicken powder: 1 tea spoon (optional)
  14. Curry leaves : 5-6
  15. Corriander leaves : freshly chopped

PROCEDURE :

First need to make the rice. For that you put some lemon juice and oil into the boiling water and then add rice and boil it for 15-20 minutes so that the rice could not be very soft and sticky and then drain the water and keep it aside. Now take a big kadai add oil into it and fry the peanuts and keep aside. In the same oil add mustard seeds , jeera , whole garam masala,bay leaves. After few seconds add ginger paste and chopped green chilli. Fry for some time and now add all the chopped tomatoes and curry leaves. cook for some time till the water gets little dry. Now add all the masala powder , haldi powder and salt , cook for some time till oil seperates. Now slowly start adding the rice and mix it with the masala , mix gently all the rice slowly . Add the fried peanuts into it and garam masala powder and mix well. Add freshly chopped corriander leaves and mix with the rice. Serve hot with cucumber or boondi raita and pakoras. Eggless cake and without oven

INGREDIENTS:

  1. Baking flour : 6 table spoon
  2. Baking soda : 1 tea spoon
  3. Baking powder : 2 tea spoon
  4. White oil : 1/2 tea cup
  5. Curd : one table spoon
  6. Powdered Sugar : 1/2 cup
  7. Vanilla essence : 1 table spoon
  8. Almonds : 8-10
  9. Milk : 3-4 table spoon

PROCEDURE:

First of all take a big boul and pour all the oil into it. Add powdered sugar and curd into the oil and mix three of them with a hand mixer until they are not separated from the bowl. Now take a sheiver and add the flour , baking soda and baking powder and sheive them nicely into the oil mixture. Again mix very well in a clock wise direction for some time and add milk into it and mix again thoroughly . Now greeze a mould and spread ghee into it and put a parchment paper and again apply ghee . Now pour the batter into it and garnish with almonds on top of it.

Inspite of oven we will use pressure cooker. First of all take out the whistle and the sealing ring. Add 500 gms salt into it and put the lid from top to pre heat the cooker. Place a stand inside the cooker and place the mould on the stand. Put the lid tightly and in low flame let it bake for 50-60 mins. Once you open the cooker check with a toothpick inside the cake, if it comes clear its done or if its not much clear then bake it for another 10 mins. kadai paneer without onion and garlic

INGREDIENTS:

  1. Paneer: 400 gms
  2. Capcicum: one small size cut into cubed pieces
  3. Tomato: 3-4 medium size
  4. Ginger : 2 inch piece grated
  5. Green Chilli : 1-2 chopped
  6. Fresh Cream : 3-4 spoon
  7. Big elaichi : 1 whole
  8. cloves : 3-4
  9. Cinnamon sticks : 1 inch
  10. Bay leaves : 1
  11. Musterd and Jeera : 1/2 spoon each
  12. Curry Leaves : 6-7 pieces
  13. Corriander Powder: 1 spoon
  14. Garam masala powder : 1 spoon
  15. Kasuri Methi : 1 spoon crushed
  16. Ghee: 2-3 spoon
  17. Hing : one pinch
  18. Red chilli powder: 1/2 spoon

PROCEDURE:

First of all shallow fry the panneer and keep them inside warm salted water. Now grate 3 tomatoes , make ginger paste and finely chopped green chillies.

Take a kadai and add 3 spoon full of ghee. Let it hot and now add a pinch of hing, mustard and jeera seeds,all whole garam masalas and also bay leaf. After few seconds add ginger paste and chopped green chillies and curry leaves . Now add grated tomatoes ,haldi ,red chilli powder, corriander powder and salt.Fry for few minutes until the ghee seperated. Now add the fresh cream and fry again. After few mins now add cubed capcicum ,cubed tomatoes and fried panneer in high flame. When the vegetables becomes soften add kasuri methi and cook for few minutes. Now add freshly chopped corriander leaves and garnish with some fresh cream on top . This recipe goes very well with naan, roti, parata and also with white zeera rice. gobi Manchurian without onion and garlic

INGREDIENTS :

  1. Cauliflower: 500gms
  2. Ginger: 1 inch grated
  3. Rice flour: 2 table spoon
  4. Plain Flour : 2 table spoon
  5. Corn Flour : 2 table spoon
  6. Green Chilli: 2-3 chopped
  7. Soya Sauce: 1-2 spoon
  8. Chilli Sauce: 1-2 spoon
  9. Termaric powder: one pinch
  10. White oil: for fry
  11. Capcicum: half of a whole capcicum and chopped
  12. Cabbage: small portion of a whole cabbage and chopped
  13. vinegar:1-2 spoon

PROCEDURE:

First of all boil some water with salt and turn off the gas and put all the cauliflower florets for 5 minutes and take them out of it. Now take a bowl and put all the dry flour. Add half of the ginger paste , pinch of termaric powder and salt a bit .Mix them with hand. Add the florets and mix dry first,then add little water at a time and slowly add water and make a smooth paste of it. Now deep fry all the cauliflowers until golden brown. Keep them aside. In a pan add oil and when it became lil hot add chopped ginger and greenchilli,saute for few secs , now add chopped capcicum and cabbage. Fry for 2-3 mins. Now add salt ,soya sauce and chilli sauce .after some time add half small glass of water and let it boil. In a small bowl add one spoon corn flour and little water,mix them well and add it into the boiling water. When you find a clear texture in the gravy add the florets and mix well. Add one spoon vinegar into it.From top add corriander leaves and serve hot with roti, parata, kulcha, pulao anything, it goes very well and enjoy with your loved ones.
