PANEER SEEKH KABAB WITHOUT ONION AND GARLIC

Dear all my friends and family members, a hearty congratulations to all of us that we could survive this pandemic and we all are safe till now. Like everyone I have went through a very tough time during last two years.But with Gods Grace, we could again stand back and I am happy that I can again connect with you all through moumitaskitchen.com . Here I am with a new recipe which you all can enjoy with your loved ones.

Ingredients :

  1. Paneer : 400gms( cut into big square pieces)
  2. Curd : 1/2 cup
  3. Roasted jeera powder : 1 tea spoon
  4. Roasted coriander powder : 1/2 tea spoon
  5. Red chilli powder : 1 tea spoon
  6. Everest chaat masala : 1 tea spoon
  7. Black pepper powder : 1 tea spoon
  8. Ajwain : 1/4 tea spoon
  9. Ginger paste : 1 tea spoon
  10. Lemon juice : 1 tea spoon
  11. Besan : 1 tea spoon (slightly roasted)
  12. Salt : taste wise
  13. Turmeric powder : 1/2 tea spoon
  14. Coriander leaves : 1 handful freshly chopped
  15. Capsicum : Red yellow and green( 1 whole each, cut into square pieces)
  16. Tomato : 1 big size( cut into square pieces)
  17. Baby Potato : 5-6 pieces (semi boiled and peel skin )
  18. Baby corn : 5-6 pieces( semi boiled)
  19. Wooden long Seekh : 8-9

PROCEDURE :

  1. First of all take a big bowl and mix all the ingredients .
  2. Now add cut capsicum, tomato,potato and corn pieces into the mixture.Mix them together.
  3. Add paneer pieces and coat nicely.Keep In the refrigerator for at least 15 minutes.
  4. Now thread them on seekh one by one equally so that all types of items are in one seekh.
  5. Heat oil in a flat tawa and place the seekh . Turn them around to grill evenly.
  6. Sprinkle Chaat masala and fresh coriander leaves before serving .Serve hot with roti paratha and salads.

Doi Fuchka ( Dahi Puri )

INGREDIENTS :

  1. Puri : 6 pcs
  2. Potato : for filling
  3. Dahi : 1/2 cup
  4. Chaat masala ( everest ) : 1 tea spoon
  5. Sweet tamarind chatney : 2-3 tea spoon
  6. Chopped green chilli : 2-3
  7. Bhaja masala( roasted coriander and cumin seeds powder) : 2 tea spoon
  8. Nylon Sev : sprinkle on top
  9. Fresh coriander : chopped

PROCEDURE

  1. For tamarind chatney , soak small amount of tamarind in warm water then take the pulp only without the seeds . Now boil with sugar in water for some time . Add black salt and salt . When become little thick add tadka with cumin seeds, black paper powder with oil .

  3. For dahi , mix dahi with little bit salt and sugar. Mix well all together .
  4. Take small 6 puries in one plate. Now first of all add potato inside, then add dahi , sweet chatney . Now add bhaja masala, chaat masala , chopped green chilli . At the end sprinkle some nylon sev and fresh chopped coriander .

Panipuri-GolGappa (Fuchka)

INGREDIENTS For Puri :

  1. Plain Flour : 8 table spoon
  2. Wheat Flour : 8 table spoon
  3. Suji : 10 table spoon

PROCEDURE For Puri :

  1. Take a big bowl and mix all the dry ingredients into it . With plain water knead a medium soft dough , cover it and keep aside for at least 1 hour .
  2. After 1 hour make very small balls like marbles and roll them very thin like small size puries. Can use some dry flour to roll them smoothly.
  3. Now take a kadai , add oil. Make it medium hot. One by one deep fry the puries until light golden brown in colour in both sides.

INGREDIENTS For Potato stuff :

  1. Potato : 4-5 ( boiled )
  2. Bhaja masala : 1.5 teaspoon ( powdered roasted coriander , cumin and dry chilli )
  3. Black salt : tastewise
  4. Salt : tastewise
  5. Green chilli : 2 ( chopped)
  6. Panipui masala ( everest ) : 1 tea spoon
  7. Fresh coriander leaves : one handful
  8. Tamarind pulp : 2 table spoon

PROCEDURE For Potato Stuff :

  1. Take a big bowl . Smash the potato first . Then add all the above ingredients and mix them well with hand .

INGREDIENTS For Water :

  1. Water : 3 -4 cup
  2. Tamarind pulp : 1/2 cup
  3. Black salt : tastewise
  4. Salt : tastewise
  5. Bhaja masala : 1 table spoon ( same as above )
  6. Panipuri masala : 1.2 table spoon
  7. Green chilli paste : 1/2 tea spoon
  8. Fresh coriander : chopped
  9. Mint leaves : chopped ( optional)

PROCEDURE For Water :

  1. Take a big pan , add water. Mix all the ingredients well and keep it in the refrigerator for at least 30 mins before serving .

SERVING PROCEDURE :

  1. Take one puri , add 1 table spoon Potato stuff and fill the puri with the prepared cold water .

Aloor Chop Without Onion and Garlic( Potato Cutlet )

INGREDIENTS :

  1. Potato : 4 ( boiled)
  2. Ginger paste : 1/2 table spoon
  3. Green chilli : 2 ( chopped)
  4. Cumin seeds : 1/2 tea spoon
  5. Peanuts : 1 table spoon
  6. Coriander powder : 1 tea spoon
  7. Red chilli powder : 1 tea spoon
  8. Mustard oil : for making potato stuff
  9. Gram flour( besan) : for making batter
  10. Baking soda : one pinch
  11. Coriander leaves : freshly chopped

PROCEDURE :

  1. Take a kadai, add mustard oil.Now fry the peanuts first and keep them aside.Now in the same oil add cumin seeds ,ginger paste and green chilli. After frying for few seconds add boiled smashed potato into it. Add salt , turmeric powder, red chilli powder and coriander powder and mix them very well in a medium low flame.
  2. Add fried peanuts and freshly chopped coriander leaves into it. And mix very well all together. The stuff is ready.
  3. For the batter in a big bowl add besan , baking soda ,salt and red chilli powder. With water mix them very nicely to make a medium consistency batter.
  4. Now from the potato stuff, take small portion and make round ball. With the help of a plastic press the round ball inside the plastic cover and put them in the batter.
  5. In a deep pan , add oil for frying. Carefully take out the flat potato stuff from the batter and directly put it into the medium hot oil. Fry until both the sides become golden brown .
  6. Serve hot with puffed rice or also can eat with sauce and salad.

Homemade Vegetarian Pizza Without Yeast

INGREDIENTS for Pizza Base :

  1. Plain flour : 1 cup
  2. Baking Soda : 1/2 tea spoon
  3. Baking Powder : 1/2 tea spoon
  4. Salt : to taste
  5. Sugar : 1 tea spoon
  6. Curd : 1/2 cup
  7. Oregano herbs : 1/2 tea spoon
  8. White oil : 2-3 table spoon

PROCEDURE for Pizza Base :

  1. Take all the ingredients in a big bowl. Make a soft dough . Do not use water. If the dough is very dry use just 1-2 spoon water else avoid using water. After making a soft dough coat with oil and keep it with a lid to set for atleast 1 hour .
  2. Make two portions from the dough. Roll it with some wheat flour just like Roti. But it will be thicker than roti.
  3. Now with a fork , lightly prick on top of the pizza base .

INGREDIENTS for Pizza Sauce :

  1. Tomato : 2 ( chopped)
  2. Black pepper powder : 1 tea spoon
  3. Salt : to taste
  4. Red chilli powder : 1 tea spoon
  5. Oregano : 1/2 tea spoon

PROCEDURE for Pizza Sauce :

  1. Take a pan , add oil . Add chopped tomatoes . Fry for some time .
  2. Now add red chilli powder , black pepper powder, salt and oregano leaves. Mix well for another 2-3 mins .

INGREDIENTS for Pizza Toppings :

  1. Paneer : 100 gms ( cut into very small cubes )
  2. Capcicum ( Red and Green) : 1/2 cup
  3. Tomato : 1/2 cup
  4. Red chilli powder : 1/2 tea spoon
  5. Salt : to taste

PROCEDURE for Pizza Toppings :

  1. Take a pan add oil . Add paneer , capcicum and fry for few seconds . Add tomatoes , red chilli powder and salt . Mix well just for 2-3 mins. Need to just saute the vegetables . No need to cook fully.
  2. Can add any toppings like pineapple , mushroom , mock soya chicken pieces .

Final Step to Make pizza :

  1. Take the pizza base , apply and spread the pizza sauce first ,then add the toppings . On top of it add mozzarella cheese and oregano.
  2. Now if you are making it on pan , then greeze the pan lightly and place the pizza base into it and cover it with a lid. Let it cook in low flame for 20-25 mins .
  3. If you are making it in oven then preheat the oven in 240°C for 10 mins. Now place the pizza in a baking paper on baking tray and carefully place the tray inside the oven. Let it bake for 15-20 mins in 240°C.

BREAD PAKORA

INGREDIENTS :

  1. White Bread : 2 slice ( cut into square pieces)
  2. Besan flour : 4-5 table spoon
  3. Green chilli : 2
  4. Roasted cumin powder : 1/2 tea spoon
  5. Roasted coriander powder : 1/2 tea spoon
  6. Red chilli powder : 1 tea spoon
  7. Coriander leaves : freshly chopped
  8. Baking soda : 1/4 tea spoon

PROCEDURE :

  1. Make a semi liquid batter with water with all the above ingredients .
  2. Cut 1 slice of bread into 4 pieces .
  3. Dip each piece into the batter nicely and deep fry them .
  4. Take out only when both sides beacome golden brown in colour .
  5. Serve hot with green chatney or sauce with some salad .

Potato Chivra (Flattened rice) Chop

INGREDIENTS :

  1. Potato : 2 ( boiled and mashed)
  2. Chivra : 1 cup ( soak into water )
  3. Green chilli : 2-3 ( finely chopped)
  4. Coriander leaves : finely chopped
  5. Chaat Masala : 1/2 tea spoon
  6. Red chilli powder : 1/2 tea spoon
  7. Salt : tastewise
  8. Sugar : 1/2 tea spoon

PROCEDURE :

  1. Squeeze water from the soaked chivra very well and keep in a big bowl, take mashed potato and all the other ingredients into the bowl.
  2. Mix very well all the ingredients .
  3. Take small portion from it and give it a oval shape.
  4. Deep fry them in a medium low flame.
  5. Serve hot with salad and sauce.

Potato Roastie

INGREDIENTS :

  1. Potato : 2 medium size ( semi boiled)
  2. Salt : tastewise
  3. Black pepper powder : one pinch
  4. Butter : 1 table spoon

PROCEDURE :

  1. Peel the potatoes and boil it upto 60% with salt in a deep pan.
  2. Grate the potatoes with a grater and keep in a plate.
  3. Now in non stick tawa , grease with butter and spred the grated potatoes like a omelette with a fork. Let it roast in one side in medium low flame.
  4. Very carefully keep it on plate and again grease the tawa with butter. Now place the other side on tawa very carefully again in medium low flame .
  5. Keep the roastie on a plate , sprinkle black pepper powder on top.

Pan cake without egg

INGREDIENTS :

  1. Plain flour : 4 table spoon
  2. Melted butter : 2 table spoon
  3. Baking powder : 1/4 tea spoon
  4. Baking soda : 1/4 tea spoon
  5. Sugar : 2 table spoon
  6. Milk : 4-5 table spoon

PROCEDURE :

  1. Take a mixing bowl , add all the ingredients and mix very well so that there should not be any lumps and the batter will have a pouring consistency.
  2. Take a non stick pan and let it hot . Once the pan is hot lower the flame and pour the batter what size you want. Now cover it with a lid for 2-3 mins.
  3. If you find the porous testure on the top side then flip it to the other side and again cook for another 2-3 mins .
  4. Serve hot with honey .

vegetable chop

INGREDIENTS :

  1. Potato : 2 boiled
  2. Beet root :1 boiled
  3. Carrot : 1 boiled
  4. Cauliflower : 1/2 boiled
  5. Peas : 1/2 cup boiled
  6. Oil : for frying
  7. Salt : tastewise
  8. Peanuts : 2 table spoon fried
  9. Black jeera (kalonji): 1/2 tea spoon
  10. Green chilli : 2 chopped
  11. Cumin poweder : 1 tea spoon
  12. Ginger paste : 1 tea spoon
  13. Corn flour : 2 table spoon
  14. Bread crumbs : to coat the chops

PROCEDURE :

  1. Cut all the vegetables in cubed pieces and pressure cook them with 3 whistle.
  2. Strain all the water from the vegetables and mash the vegetables with a masher .
  3. Take a kadai , add oil and add kalonji , green chilli and ginger paste .
  4. Add all the mashed vegetables ,add salt ,sugar and cumin powder . Cook until it gets dry .
  5. Let the stuff dry fully.
  6. Make a thin liquid batter with corn flour.There should not be any lumps.
  7. Give shape like oval with the stuff and coat them in corn flour batter.Now again coat with bread crumbs.
  8. Now fry the chops in medium low hot oil and keep them on a tissue paper.
  9. Serve hot with salad,sauce and green chatney.
