BASANTI PULAO (SWEET FRAGRANT RICE )

INGREDIENTS :

  1. Govindobhog chal(chinigura rice) : 2 cups (soaked)
  2. Sugar : 1 cup
  3. Salt : tastewise
  4. Turmeric powder : 1/2 tea spoon
  5. Ghee : 3-4 tea spoon
  6. White oil : 2 tea spoon
  7. Cashew : 10-12 pieces
  8. Raisins : 2 tea spoon
  9. Bay leaves : 2 -3
  10. Whole Garammasala: cinnamon sticks 2″ , cardamoms 4-5 , black peppers 8-9, cloves 2-3

PROCEDURE :

  1. Wash and soak the rice for at least 1 hour.
  2. Heat oil and ghee in a pressure cooker in low flame . Add bay leaves and all whole garam masala and cashew nuts. Fry until the cashew nuts become light golden brown.
  3. Strain off all the water and add the soaked rice into the cooker in medium low flame and fry until the rice grains are little big in size.At the same time add turmeric and raisins too with the mixture.
  4. Add 4.5 cups of water and the sugar into the cooker.This is the most important part of this cooking as the water measurement will decide the texture and softness of the pulao . Close the lid and give 2 whistles in medium flame.
  5. Let the lid to open by itself.Do not release the steam before time.
  6. Now transfer the pulao in a big bowl so that the pulao don’t become sticky.
  7. Serve hot with Spicy aloodum .

Lemon rice

INGREDIENTS :

  1. Rice : 1 cup
  2. Lemon : 1 ( juice)
  3. Ginger : 1/2 inch ( grated)
  4. Green chilli : 2 ( chopped)
  5. Mustard seeds : 1 tea spoon
  6. Peanuts : 2 table spoon
  7. Urad dal : 1/2 tea spoon
  8. Hing : 1/2 tea spoon
  9. Dry chilli : 2
  10. Ghee : 1 table spoon
  11. Curry leaves : 6-7
  12. Bay leaf : 1
  13. Whole garam masala : 2 cardamom , 2 cloves , 1 inch cinnamon stick, 4-5 black pepper.
  14. Corriander leaves : freshly chopped

PROCEDURE :

  1. First of all make the rice in a way so that it does not become very soft and sticky. And for that use oil and lemon juice during boiling the rice and strain all the water .
  2. Take a kadai , add oil and ghee and let it hot . Now add whole garam masala , bay leaf and dry chillis first . Then add peanuts , urad dal and mustard seeds , hing and curry leaves.. Fry for some time. Then add ginger paste and chopped green chillies .
  3. When all the ingredients are fried moderately , add the boiled rice into the kadai , add salt according to the taste and the lemon juice . Now mix everything very well.
  4. Add freshly chopped corriander and serve hot with any pakoras or raita.

KHICHDI with Vegetables in pressure cooker

INGREDIENTS :

  1. Rice : 1 cup
  2. Moong Dal : 1 cup
  3. Vegetables : 1 bowl( pumpkin, cauliflower, Carrot, beans ,small potato with skin)
  4. Green peas : 1/2 cup
  5. ginger paste : 1 tea spoon
  6. Green chilli : 2
  7. Panchforon : 1/2 tea spoon
  8. Bay leaves : 1
  9. Ghee : 1 table spoon
  10. Whole garam masala : 1 inch long cinnamon stick, 2 cardamom, 2 cloves, 4-5 black pepper
  11. Dry red chilli : 2

PROCEDURE :

  1. Dry roast moong dal in pressure cooker and wash it once ,add water and let it boil .
  2. Add washed rice into it and wait until together rice and dal stars to boil.Now add termeric powder ,salt, ginger paste,green chilli and cumin powder.Boil for min 5 mins in medium high flame .
  3. Take a pan , add oil and add all the vegetables and green peas . Add salt cumin powder,red chilli powder and fry for 2 mins.
  4. Add all the fried vegetables into the cooker . Add water according to your desired consistancy of the khichdi . Wait for 2 whistle.
  5. Take a small pan , add ghee, bay leaves, dry chillies, whole garam masala and panchforn together. Add this tadka into the khichdi.
  6. Serve hot with papad and pickle.

Tomato Rice Without Onion and Garlic

INGREDIENTS :

  1. Basmati Rice : 3 cup
  2. Tomatoes : 4-5 medium size
  3. Peanuts : half cup
  4. Ginger : 2 inch long piece (paste)
  5. Green Chilli : 2-3 chopped
  6. Whole Garam masala : 2 cardamom,1 inch cinamon stick,3-4 cloves,2 bay leaves
  7. Mustard Seeds: 1 tea spoon
  8. Jeera : 1/2 teaspoon
  9. Jeera powder: 1 tea spoon
  10. Red chilli powder : 1 tea spoon
  11. Turmeric powder: 1 tea spoon
  12. Salt: Taste wise
  13. Aachi kadai chicken powder: 1 tea spoon (optional)
  14. Curry leaves : 5-6
  15. Corriander leaves : freshly chopped

PROCEDURE :

First need to make the rice. For that you put some lemon juice and oil into the boiling water and then add rice and boil it for 15-20 minutes so that the rice could not be very soft and sticky and then drain the water and keep it aside. Now take a big kadai add oil into it and fry the peanuts and keep aside. In the same oil add mustard seeds , jeera , whole garam masala,bay leaves. After few seconds add ginger paste and chopped green chilli. Fry for some time and now add all the chopped tomatoes and curry leaves. cook for some time till the water gets little dry. Now add all the masala powder , haldi powder and salt , cook for some time till oil seperates. Now slowly start adding the rice and mix it with the masala , mix gently all the rice slowly . Add the fried peanuts into it and garam masala powder and mix well. Add freshly chopped corriander leaves and mix with the rice. Serve hot with cucumber or boondi raita and pakoras.
