Cauliflower : 3-4 florets ( cut into small pieces)
Green beans : 8-10 ( cut into small pieces)
Capsicum : 1/3 of red , green and yellow ( cut into small pieces)
Carrot : 1 small ( cut into small pieces)
Paneer : 100 gms (optional)
Tomato : 2 medium size ( paste)
Ginger : 1 inch ( paste )
Cumin seeds : 1/2 tea spoon
Cashew : 8-10 ( soak for sometime and then paste)
Raisins : 10-15 ( soak and paste)
Charmagaz : 1 tea spoonful ( soak and paste)
Curryleaves : 8-10
Whole garammasala : cardamom 2, cinnamon 1 inch long, bay leaf 1 small, black pepper 5-6 ,cloves 2
Milk : 1/2 cup
Coriander powder : 1 tea spoon
Cumin powder : 1/2 tea spoon
Red chilli powder : 1/2 tea spoon
Hing : one pinch
Salt : according to taste
khoya : according to taste
Sugar: according to taste
Grammasala powder : 1/2 tea spoon
Butter : 2 tea spoon
Kasuri methi : 1/2 tea spoon
PROCEDURE
First of all cut all the vegetables in small pieces and then fry them in a way so that they are crunchy and not very soft.
Add oil in a pan and add cumin seeds , all the whole garammasalas and hing. After few seconds add ginger and tomato paste , cumin -coriander powder ,red chilli powder . Cook for 5-6 mins.
Add cashew-raisins-charmagaz paste into it . Again cook for 3-4 mins .
Now add khoya , sugar and salt . Cook the gravy until it starts leaving oil. Add kasuri methi into it.
Now add all the fried vegetables into it and mix them nicely. Add milk and water and let it boil for 4-5 mins in medium high flame.Add garammasala powder and butter into it.
Add freshly chopped coriander and serve hot.

Cut the brinjal lengthwise and coat with turmeric and salt.Fry until golden brown.
In a bowl mix curd salt and sugar nicely.
Take a pan, add oil. Add mustard seeds , red chillies, green chillies, hing and curry leaves. After few seconds, add fried brinjals and mix altogether.Now add the yogurt mix into the pan and mix with the brinjals.

Whole garam masala : 1″ cinnamon stick, 2cloves, 2-3 cardamom, few black peppers
Bay leaves : 1
Garam masala powder : 1/2 tea spoon
Turmeric powder : 1/2 tea spoon

PROCEDURE
First of all peel the potol skin in an uneven pattern that means don’t peel very clean way .Keep some of the portion of the skin it gives good texture and taste too.
Cut potato in medium sizes as well .
Fry both potol and potato until golden brown along with some salt and turmeric powder.
Make a smooth paste of ingredients 4-9.
Heat mustard oil , add few cumin seeds, bay leaves , hing and few whole garam masala .
Add the smooth paste into the oil . Add chopped tomato , turmeric powder , red chilli powder , salt and sugar. Cook until oil separates and a very good aroma comes from it.
Now add all the fried potol and potato pieces and mix them well with the masala.Cook in low flame at least for 7-8 mins.
Add hot water .
Let it boil with lid for 5-6 mins in medium high flame.
Add ghee and garam masala powder at the end.

Now take out the chana from the liquid and keep aside.
Take a frying pan, add oil. when the oil becomes moderately hot, add the cumin seeds , hing and green chilli. Add cubed potatoes . Fry for some time . Add all the dry masala powder with chopped tomatotes. Fry until a nice aroma comes. Add kasuri methi , mix all together nicely.
Add the fresh chana and let it fry for another few mins. Now add very less water and let them cook with lid for 2-3 mins.

PROCEDURE :
First of all cut the potatoes and longbeans in very small pieces.
Take a pan , add oil. Add carom seeds and hing . Add potatoes , fry for sometime. Then add longbeans and fry again for sometime .
Now add all the dry masalas and fry in low flame for minimum 5 mins. Then add little bit water . When the potatoes become soft , add garam masala powder and grated coconut . Mix well all together .
Then add fresh coriander and mix well .
On top garnish with grated coconut .

Ginger paste : 1 table spoon
Butter : 1 table spoon
Kasuri Methi : 1 tea spoon
Hing : one pinch
Cumin seeds : 1/2 tea spoon
Garam masala powder : 1 tea spoon
Red chilli powder : 1 tea spoon
Turmeric powder : 1 tea spoon
Coriander powder : 1 tea spoon
Salt and sugar : taste wise
Coriander leaves : freshly chopped
PROCEDURE :
First of all make a paste of tomato and green chilli together.
Soak almonds for minimum 4 hrs and then make a smooth paste of it after peeling of its skin.
Take a kadai, shallow fry the paneer cubes. Now in the kadai with oil add butter. Add cumin seeds and hing . After this add whole garam masala , ginger paste and cut green chillies. Fry for few seconds and then , add tomato paste. Add coriander powder, turmeric powder and red chilli powder. Cook in low flame at least for 5 mins.
Add Almond paste into it. Again cook at least for another 5-6 mins . When oil starts separating add kasuri methi, salt and sugar. and mix well.
Add warm water into it and also the fried paneer.
Mix very well all together and let it cook with lid for another 8-10 mins in low flame.
Add garam masala powder and freshly chopped coriander leaves . serve hot with roti, paratha or plain white rice .

First of all fry paneer cubes and the potato pieces lightly golden brown .
Add oil in the kadai. Add whole garam masala , hing and cumin seeds . Add ginger paste and green chillies. Add chopped tomatoes.
After this add roasted coriander powder , cumin powder, turmeric powder, red chilli powder and salt . Fry very well . Then add kasuri methi , boiled green peas and fry again.
Now add paneer and potato pieces . Mix very well all together. Add fresh cream and cook for 2-3 mins again. Now add 1 cup of hot water and let it boil for 6-7 mins with lid.
Add garam masala powder and freshly chopped coriander leaves.Serve hot .

PROCEDURE :
First of all take a kadai and add oil . Add soya chicken pieces and potato together . Fry in a medium low flame until light golden brown .
Take out the fried potato and soya chicken pieces from kadai. In the same kadai add oil and add cumin seeds , hing and whole garam masala . Add ginger paste and green chilli . Now add tomato pieces and aachi kadai chicken powder, cumin powder, red chilli powder and turmeric powder . Cook for 1-2 mins. Now add fried potatoes and soya chicken pieces.Cook for 7-8 mins in low flame and mix everything well .
When everything fried very well, add hot water into it . Let them boil together with lid .
After 5 mins add garam masala powder and ghee . Add fresh coriander leaves and serve hot.

Mixed Vegetables : 2.5 cup ( Potato, Cauliflower, French beans , Brinjal, Carrot, Capcicum, Long beans, Pumpkin , Radish. All cut into lenghth wise)
Paneer : 100 gms ( cut into long pieces)
Panch foron : 1/2 tea spoon
Dry chilli : 1
Turmeric powder : 1/2 tea spoon
Salt : tastewise
Radhuni : 1/4 tea spoon
Sugar : 1/2 tea spoon
Everest sabji masala : 1/2 tea spoon
Kasuri Methi : 1/2 tea spoon
Garam masala Powder : 1/2 tea spoon
Mustard oil : 3 table spoon
PROCEDURE :
First of all take a kadai and add oil . Now first of all add the cauliflowers and fry until light golden brown in colour. Then add all other vegetables except brinjal. Fry very well until the vegetables get 60% fried . Add brinjal and fry for 1-2 mins.
Now in the same kadai, make a place in the middle keeping the vegetables at sides, add panchforn, dry red chilli and radhuni. Let them fry for few seconds in the middle and then mix all together.Add paneer pieces, turmeric powder, sabji masala, green chilli , salt and sugar. Cook with lid for another 5-7 mins in very low flame.
In the whole procedure no use of water.
Once vegetables gets tender , add garam masala powder and fresh coriander leaves.

PROCEDURE :
First of all , take a pan and add water. Now add tomato, ginger, green chilli , whole garam masala . Let them boil. Once get tender and cold , take out the bay leaf and make a fine paste with rest of all.
Shallow fry the paneers and half boil the peas.
Now take a kadai , add oil and butter. Add cumin seeds and hing . Now add grated ginger and green chilli . After few seconds add the masala paste . Add turmeric powder , red chilli powder , salt and sugar. Now cook for 1-2 min .
Add half boiled matar and kasuri methi. Cook in medium low flame for 4-5 mins. Now add the fried paneer and fresh cream and cook for another 5 mins in low flame. Now add 1 cup of water and mix well. Let it cook with lid for 5 mins.
Garnish with fresh coriander leaves .
