VEGETABLE KURMA WITHOUT ONION AND GARLIC

INGREDIENTS :

  1. Cauliflower : 3-4 florets ( cut into small pieces)
  2. Green beans : 8-10 ( cut into small pieces)
  3. Capsicum : 1/3 of red , green and yellow ( cut into small pieces)
  4. Carrot : 1 small ( cut into small pieces)
  5. Paneer : 100 gms (optional)
  6. Tomato : 2 medium size ( paste)
  7. Ginger : 1 inch ( paste )
  8. Cumin seeds : 1/2 tea spoon
  9. Cashew : 8-10 ( soak for sometime and then paste)
  10. Raisins : 10-15 ( soak and paste)
  11. Charmagaz : 1 tea spoonful ( soak and paste)
  12. Curryleaves : 8-10
  13. Whole garammasala : cardamom 2, cinnamon 1 inch long, bay leaf 1 small, black pepper 5-6 ,cloves 2
  14. Milk : 1/2 cup
  15. Coriander powder : 1 tea spoon
  16. Cumin powder : 1/2 tea spoon
  17. Red chilli powder : 1/2 tea spoon
  18. Hing : one pinch
  19. Salt : according to taste
  20. khoya : according to taste
  21. Sugar: according to taste
  22. Grammasala powder : 1/2 tea spoon
  23. Butter : 2 tea spoon
  24. Kasuri methi : 1/2 tea spoon

PROCEDURE

  1. First of all cut all the vegetables in small pieces and then fry them in a way so that they are crunchy and not very soft.
  2. Add oil in a pan and add cumin seeds , all the whole garammasalas and hing. After few seconds add ginger and tomato paste , cumin -coriander powder ,red chilli powder . Cook for 5-6 mins.
  3. Add cashew-raisins-charmagaz paste into it . Again cook for 3-4 mins .
  4. Now add khoya , sugar and salt . Cook the gravy until it starts leaving oil. Add kasuri methi into it.
  5. Now add all the fried vegetables into it and mix them nicely. Add milk and water and let it boil for 4-5 mins in medium high flame.Add garammasala powder and butter into it.
  6. Add freshly chopped coriander and serve hot.

This authentic northindian recipe everyone will love to eat. At my home from my kid to my parents everybody enjoys this whenever I prepare it.This recipe goes very well with Butter Naan ( can follow my recipe BUTTER Naan without egg on tawa) , Jeera rice , and also with roti and plain paratha. DOI BEGUN without onion and garlic (BRINJAL WITH YOGURT)

INGREDIENTS:

  1. Brinjal : 4-5 ( small size , cut into lengthwise)
  2. Yogurt : 1/2 cup
  3. Oil : 2-3 tea spoon
  4. Salt : Tastewise
  5. Sugar : tastewise
  6. Curry leaves : 10-12
  7. Mustard seeds : 1 tea spoon
  8. Hing : 2 pinch
  9. Red chilli : 2
  10. Green chilli : 2 (optional)
  11. Coriander leaves : freshly chopped

PROCEDURE :

  1. Cut the brinjal lengthwise and coat with turmeric and salt.Fry until golden brown.
  2. In a bowl mix curd salt and sugar nicely.
  3. Take a pan, add oil. Add mustard seeds , red chillies, green chillies, hing and curry leaves. After few seconds, add fried brinjals and mix altogether.Now add the yogurt mix into the pan and mix with the brinjals.
  4. Garnish with freshly chopped coriander leaves.

This simply made delicious brinjal recipe will love by every age group. POTOL KOSHA (PARWAL MASALA) WITHOUT ONION AND GARLIC

INGREDIENTS

  1. Potol (parwal) : 500 gms
  2. Potato : 2 big size
  3. Tomato :1 (cut into medium pieces)
  4. Ginger paste : 2 spoon
  5. Mustard oil : for cooking
  6. Whole coriander : 1 tea spoon
  7. Whole cumin seeds : 1 tea spoon
  8. whole fennel seeds : 1/3 tea spoon
  9. Whole red chilli : 2
  10. Whole garam masala : 1″ cinnamon stick, 2cloves, 2-3 cardamom, few black peppers
  11. Bay leaves : 1
  12. Garam masala powder : 1/2 tea spoon
  13. Turmeric powder : 1/2 tea spoon
  14. Red chilli Powder : 1 tea spoon
  15. Salt : tastewise
  16. Sugar : taste wise
  17. Hing : 1 pinch
  18. Ghee : 1 tea spoon

PROCEDURE

  1. First of all peel the potol skin in an uneven pattern that means don’t peel very clean way .Keep some of the portion of the skin it gives good texture and taste too.
  2. Cut potato in medium sizes as well .
  3. Fry both potol and potato until golden brown along with some salt and turmeric powder.
  4. Make a smooth paste of ingredients 4-9.
  5. Heat mustard oil , add few cumin seeds, bay leaves , hing and few whole garam masala .
  6. Add the smooth paste into the oil . Add chopped tomato , turmeric powder , red chilli powder , salt and sugar. Cook until oil separates and a very good aroma comes from it.
  7. Now add all the fried potol and potato pieces and mix them well with the masala.Cook in low flame at least for 7-8 mins.
  8. Add hot water .
  9. Let it boil with lid for 5-6 mins in medium high flame.
  10. Add ghee and garam masala powder at the end.

Aloo-Chanar Sabji ( Potato -formless cottage cheese Recipe )

INGREDIENTS :

  1. Milk : 1 ltr
  2. Lemon juice: 2-3 table spoon
  3. Potato : 1 ( cut into small cubes)
  4. Tomato : 1 (small)
  5. Cumin powder : 1/2 tea spoon
  6. Coriander powder : 1/2 tea spoon
  7. Turmeric powder : 1/2 tea spoon
  8. Garam masala powder : 1/2 tea spoon
  9. Kasuri methi : 1/3 tea spoon
  10. Hing : one pinch
  11. Red chilli powder : 1/3 tea spoon
  12. Sugar : tastewise
  13. Salt : tastewise
  14. Greenchilli : 1
  15. Coriander leaves : freshly chopped

PROCEDURE

  2. Now take out the chana from the liquid and keep aside.
  3. Take a frying pan, add oil. when the oil becomes moderately hot, add the cumin seeds , hing and green chilli. Add cubed potatoes . Fry for some time . Add all the dry masala powder with chopped tomatotes. Fry until a nice aroma comes. Add kasuri methi , mix all together nicely.
  4. Add the fresh chana and let it fry for another few mins. Now add very less water and let them cook with lid for 2-3 mins.
  5. Add garam masala powder and coriander leaves . Serve hot with plain rice , roti, paratha ,or chapati.

Potato Longbeans Fry With grated Coconut

INGREDIENTS

  1. Potato : 2 ( cut into small cubes)
  2. Long beans : One bunch ( cut into fine small pieces )
  3. Carom seeds : 1/2 tea spoon
  4. Hing : One pinch
  5. Roasted powder : Cumin and Coriander ( Roasted , powdered)
  6. Chilli flakes : 1/2 tea spoon
  7. Grated Coconut : 1 table spoon
  8. Turmeric powder : 1/2 tea spoon
  9. Salt : tastewise
  10. Sugar : 1/2 tea spoon
  11. Garammasala : 1/2 tea spoon
  12. Coriander leaves : freshly chopped

PROCEDURE :

  1. First of all cut the potatoes and longbeans in very small pieces.
  2. Take a pan , add oil. Add carom seeds and hing . Add potatoes , fry for sometime. Then add longbeans and fry again for sometime .
  3. Now add all the dry masalas and fry in low flame for minimum 5 mins. Then add little bit water . When the potatoes become soft , add garam masala powder and grated coconut . Mix well all together .
  4. Then add fresh coriander and mix well .
  5. On top garnish with grated coconut .

Paneer Butter Masala In Almond Paste Without Onion And Garlic

INGREDIENTS :

  1. Paneer : 250 gms
  2. Tomato : 2 ( paste)
  3. Almond : 15-20 ( soaked and paste)
  4. Whole Garam Masala : 1 bay leaf, 2 cloves , 2 cardamoms , 1 ” cinnamon stick, 5-6 black pepper
  5. Green chilli : 2 ( diagonally cut )
  6. Ginger paste : 1 table spoon
  7. Butter : 1 table spoon
  8. Kasuri Methi : 1 tea spoon
  9. Hing : one pinch
  10. Cumin seeds : 1/2 tea spoon
  11. Garam masala powder : 1 tea spoon
  12. Red chilli powder : 1 tea spoon
  13. Turmeric powder : 1 tea spoon
  14. Coriander powder : 1 tea spoon
  15. Salt and sugar : taste wise
  16. Coriander leaves : freshly chopped

PROCEDURE :

  1. First of all make a paste of tomato and green chilli together.
  2. Soak almonds for minimum 4 hrs and then make a smooth paste of it after peeling of its skin.
  3. Take a kadai, shallow fry the paneer cubes. Now in the kadai with oil add butter. Add cumin seeds and hing . After this add whole garam masala , ginger paste and cut green chillies. Fry for few seconds and then , add tomato paste. Add coriander powder, turmeric powder and red chilli powder. Cook in low flame at least for 5 mins.
  4. Add Almond paste into it. Again cook at least for another 5-6 mins . When oil starts separating add kasuri methi, salt and sugar. and mix well.
  5. Add warm water into it and also the fried paneer.
  6. Mix very well all together and let it cook with lid for another 8-10 mins in low flame.
  7. Add garam masala powder and freshly chopped coriander leaves . serve hot with roti, paratha or plain white rice .

Potato Paneer Recipe without Onion and Garlic

INGREDIENTS :

  1. Paneer : 250 gms
  2. Poato : 2 ( cut into paneer size cube )
  3. Tomato : 1 ( chopped)
  4. Green peas : 1/3 cup ( optional)
  5. Ginger paste : 1 table spoon
  6. Fresh cream : 1 table spoon ( optional)
  7. Whole garam masala : Β 1 bay leaf, 2 cloves , 2 cardamoms , 1 ” cinnamon stick, 5-6 black pepper
  8. Roasted Coriander powder : 1 tea spoon
  9. Roasted cumin powder : 1 tea spoon
  10. Red chilli powder : 1 tea spoon
  11. Kasuri methi : 1/2 tea spoon
  12. Hing : 1 pinch
  13. Cumin seeds : 1/2 tea spoon
  14. Coriander leaves : freshly chopped
  15. Garam masala powder : 1/2 tea spoon

PROCEDURE :

  1. First of all fry paneer cubes and the potato pieces lightly golden brown .
  2. Add oil in the kadai. Add whole garam masala , hing and cumin seeds . Add ginger paste and green chillies. Add chopped tomatoes.
  3. After this add roasted coriander powder , cumin powder, turmeric powder, red chilli powder and salt . Fry very well . Then add kasuri methi , boiled green peas and fry again.
  4. Now add paneer and potato pieces . Mix very well all together. Add fresh cream and cook for 2-3 mins again. Now add 1 cup of hot water and let it boil for 6-7 mins with lid.
  5. Add garam masala powder and freshly chopped coriander leaves.Serve hot .

This recipe is very simple and fast . Even my 9 year old daughter once tried this recipe with her own with my minimal help😍😍 . It goes very well with roti, parata and also plain white rice. Please try at home and share your experience with me in comment box.

Soya Mock Chicken Curry with Potato

INGREDIENTS :

  1. Soya Chicken : 200 gms
  2. Potato : 2 ( cut into medium cube )
  3. Tomato : 1
  4. Ginger paste : 1 table spoon
  5. Aachi Kadai chicken masala : 1 table spoon
  6. Cumin powder : 1/2 table spoon
  7. Cumin seeds : 1/2 tea spoon
  8. Hing : 1/2 tea spoon
  9. Whole garam masala : 1 bay leaf, 2 cloves , 2 cardamoms , 1 ” cinnamon stick, 5-6 black pepper
  10. Turmeric powder : 1/2 tea spoon
  11. Red chilli powder : 1 tea spoon
  12. Ghee : 1 tea spoon
  13. Garam masala powder : 1 tea spoon

PROCEDURE :

  1. First of all take a kadai and add oil . Add soya chicken pieces and potato together . Fry in a medium low flame until light golden brown .
  2. Take out the fried potato and soya chicken pieces from kadai. In the same kadai add oil and add cumin seeds , hing and whole garam masala . Add ginger paste and green chilli . Now add tomato pieces and aachi kadai chicken powder, cumin powder, red chilli powder and turmeric powder . Cook for 1-2 mins. Now add fried potatoes and soya chicken pieces.Cook for 7-8 mins in low flame and mix everything well .
  3. When everything fried very well, add hot water into it . Let them boil together with lid .
  4. After 5 mins add garam masala powder and ghee . Add fresh coriander leaves and serve hot.

This same recipe you can make also with big size soya chunks if the soya mock chickens are not available in your place.

Mixed Vegetables Dry Without Onion And Garlic

INGREDIENTS :

  1. Mixed Vegetables : 2.5 cup ( Potato, Cauliflower, French beans , Brinjal, Carrot, Capcicum, Long beans, Pumpkin , Radish. All cut into lenghth wise)
  2. Paneer : 100 gms ( cut into long pieces)
  3. Panch foron : 1/2 tea spoon
  4. Dry chilli : 1
  5. Turmeric powder : 1/2 tea spoon
  6. Salt : tastewise
  7. Radhuni : 1/4 tea spoon
  8. Sugar : 1/2 tea spoon
  9. Everest sabji masala : 1/2 tea spoon
  10. Kasuri Methi : 1/2 tea spoon
  11. Garam masala Powder : 1/2 tea spoon
  12. Mustard oil : 3 table spoon

PROCEDURE :

  1. First of all take a kadai and add oil . Now first of all add the cauliflowers and fry until light golden brown in colour. Then add all other vegetables except brinjal. Fry very well until the vegetables get 60% fried . Add brinjal and fry for 1-2 mins.
  2. Now in the same kadai, make a place in the middle keeping the vegetables at sides, add panchforn, dry red chilli and radhuni. Let them fry for few seconds in the middle and then mix all together.Add paneer pieces, turmeric powder, sabji masala, green chilli , salt and sugar. Cook with lid for another 5-7 mins in very low flame.
  3. In the whole procedure no use of water.
  4. Once vegetables gets tender , add garam masala powder and fresh coriander leaves.

Matar Paneer ( cottage cheese with green peas)

INGREDIENTS :

  1. Paneer : 300 gms
  2. Green peas : 1 cup
  3. Tomato : 3 medium size
  4. Cashew : 6-7
  5. Whole garam masala : 2 cardamom, 2 cloves , 1 bay leaf, 1 cinnamon stick , 4-5 black pepper
  6. Green chilli : 2
  7. Ginger : 2″
  8. Butter : 1 table spoon
  9. Hing : one pinch
  10. Cumin seeds : 1/2 tea spoon
  11. Fresh cream : 2 table spoon ( optional )
  12. Coriander powder : 1 tea spoon
  13. Red chilli powder : 1 tea spoon
  14. Turmeric powder : 1/2 tea spoon
  15. Kasuri methi : 1/2 tea spoon
  16. Coriander leaves : freshly chopped

PROCEDURE :

  1. First of all , take a pan and add water. Now add tomato, ginger, green chilli , whole garam masala . Let them boil. Once get tender and cold , take out the bay leaf and make a fine paste with rest of all.
  2. Shallow fry the paneers and half boil the peas.
  3. Now take a kadai , add oil and butter. Add cumin seeds and hing . Now add grated ginger and green chilli . After few seconds add the masala paste . Add turmeric powder , red chilli powder , salt and sugar. Now cook for 1-2 min .
  4. Add half boiled matar and kasuri methi. Cook in medium low flame for 4-5 mins. Now add the fried paneer and fresh cream and cook for another 5 mins in low flame. Now add 1 cup of water and mix well. Let it cook with lid for 5 mins.
  5. Garnish with fresh coriander leaves .
