POTOL KOSHA (PARWAL MASALA) WITHOUT ONION AND GARLIC

INGREDIENTS

  1. Potol (parwal) : 500 gms
  2. Potato : 2 big size
  3. Tomato :1 (cut into medium pieces)
  4. Ginger paste : 2 spoon
  5. Mustard oil : for cooking
  6. Whole coriander : 1 tea spoon
  7. Whole cumin seeds : 1 tea spoon
  8. whole fennel seeds : 1/3 tea spoon
  9. Whole red chilli : 2
  10. Whole garam masala : 1″ cinnamon stick, 2cloves, 2-3 cardamom, few black peppers
  11. Bay leaves : 1
  12. Garam masala powder : 1/2 tea spoon
  13. Turmeric powder : 1/2 tea spoon
  14. Red chilli Powder : 1 tea spoon
  15. Salt : tastewise
  16. Sugar : taste wise
  17. Hing : 1 pinch
  18. Ghee : 1 tea spoon

PROCEDURE

  1. First of all peel the potol skin in an uneven pattern that means don’t peel very clean way .Keep some of the portion of the skin it gives good texture and taste too.
  2. Cut potato in medium sizes as well .
  3. Fry both potol and potato until golden brown along with some salt and turmeric powder.
  4. Make a smooth paste of ingredients 4-9.
  5. Heat mustard oil , add few cumin seeds, bay leaves , hing and few whole garam masala .
  6. Add the smooth paste into the oil . Add chopped tomato , turmeric powder , red chilli powder , salt and sugar. Cook until oil separates and a very good aroma comes from it.
  7. Now add all the fried potol and potato pieces and mix them well with the masala.Cook in low flame at least for 7-8 mins.
  8. Add hot water .
  9. Let it boil with lid for 5-6 mins in medium high flame.
  10. Add ghee and garam masala powder at the end.
